The best things in life involve wild blueberries… And maple syrup :-)

This is the kind of thing I would only really recommend eating if you are a Vegan. That’s mostly because nutritionally, I think this would be on par with scrambled eggs (if you just replaced the tofu). If you think in terms of animal cruelty or the environment, however, it might be a better.
I whipped this up the morning Jaki and I were catching the ferry to Victoria. We almost missed our bus, but were able to make it out on time to catch the 10 o’clock. The recipe comes from a Vegan pamphlet Julia had on her counter which I assume was given to her by a representative of Compassion Over Killing, the organization printing the material.
I didn’t have garlic or onion powder, but I used real onions and garlic instead. I subbed the mushroom for a small chopped eggplant, and fried up all the optional things before throwing in the tofu. It was totally delicious. A lot like scrambled eggs with veggies. Here is the recipe:
