Did you know that beetroot stems and leaves are totally edible and make a delicious salad? This was my dinner last night. I came up with this completely on my own and its amazing.
Make felafels from box (so easy and delicious). Make hummus either homemade or store bought.
Salad: Wash and chop beet stems and leaves. Add lemon or lime juice, olive oil and salt and let sit.
Prepare chopped apples, sun-dried tomatoes, thinly sliced red onions or shallots and cooked or sprouted quinoa.
Make a small amount of tahini-balsamic vinagrette (I use a hand blender to combine garlic, balsamic vinegar, tahini, water and mustard powder).
Add dressing and remaining ingredients to salad at once. Add sunflower and or pumkin seeds (optional).
Top salad with hummus and Falafel.
