Food from the last month… David Lebowitz amazing socca (flat chickpea bread), leek soup and salad.

Hugo made me this soup from the book ‘Quinoa 365’. It was totally delicious. One of the times he tried a recipe from this book, it was really lacking in the spice department. So we jacked up the spices when we made this (4x) and it was really good. I am not sure what I think about this book’s philosophy of apparently everything is better with quinoa, but some of these recipes are pretty good.
Ingredients
2 sweet potatoes
one chopped onion
2 tbs water
one half cup quinoa
3 cups vegetable bouillon
1 can coconut milk
1 tsp cayenne pepper (modified)
1 tsp chili (modified)
Cook the sweet potatoes by steaming or boiling until tender (about 6-7 minutes). Set aside. In a big casserole, cook the onion and water for 7 mins. Add the bouillon and quinoa and bring to a boil, and reduce temperature to medium for 15 minutes. Add the cooked sweet potato. Blend with a hang blender, and add the coconut milk and spices.
